Fellowship in the project "Mitigation of clostridia contamination in sheep breeding; exploitation of molecular tools fo their detection and risk assessment" (Univ. Firenze)

The activity of the Assegno di Ricerca refers to Action 2.3 of the PIF - Stilnovo project and provides for the evaluation of the relationship between the number of Clostridium tyrobutyricum cells in soil/litter/ milk and the development of “late blowing” in pecorino cheese, through the use of molecular approaches. The first phase I devote to development dedicated experimental protocols, from soil/litter/ milk samples will be extracted DNA to be used for molecular analysis. Experiments of real time PCR, which will be conducted at least in triplicate, will be performed to assess the numbers of C. tyrobutyricum in soil, litter and milk samples. As it regards, the milk samples will also be analysed with the official method, which needs the growth of microorganisms. The results obtained will allow verifying the sensitivity and reproducibility of selected molecular approach also in relation to the reference method.
