This technology laboratory provides scientific and technical support to research in the optimization of technological processes for the preservation and transformation of meats and their derivatives.

It focuses its activity fundamentally on providing technical support for the development of preservation systems that extend the shelf life of fresh meats, meat preparations and meat products. It includes the study of packaging modalities, the effect and applicability of natural substances with antioxidant and/or antimicrobial action specific to each type of food, and the improvement of technological processes for the elaboration of meat derivatives.

For this purpose, the following equipment is available:

  • ONDA UV-20 Spectrophotometer.
  • Spectrophotometer CM-3610, Konica Minolta.
  • Food Texturometer TA.XT2i Texture Analyser. Stable Micro Systems
  • Universal 320R refrigerated centrifuge. Hettich Lab Technology™.
  • Differential Scanning Calorimeter 910 DSC 10. Du Pont Instruments
  • Kjeldahl Distiller UDK 129. VELP Scientifica
  • Other standard laboratory equipment

This laboratory also provides scientific-technical service in research on the optimization of technological processes for the preservation and processing of fresh fish and fish-based products.
