Analysis and evaluation of food safety (AESA)

The Research Group “Analysis and Evaluation of Food Safety” (AESA) pursues the general aim of analyzing and evaluating the risks and the application of advanced technologies in the agrifood sector in order to improve food safety and quality. Its activities also include the development of ingredients, foodstuffs, and diets that are either nutritionally balanced or have a healthy functional profile. Its scientifictechnological activity tackles the most currently relevant problems of food safety and nutrition. Its specific goals are subsumed under the area of Agriculture and Veterinary Sciences, focusing on three priority research lines that make up its strategic project: “Safe, nutritional, healthy foods for the 21st century.

What do we do?
  • Evaluation and control of chemical risks in the food chain (analysis, prevention and risk reduction due to mycotoxins; investigation of other contaminants and residues in food)​
  • Evaluation and control of biological risks in the food chain (detection and control of pathogenic and multiresistant microorganisms; transmission of antimicrobial resistance; innovative strategies for the control of food parasites)​
  • Food quality, nutrition and health (characterization of agri-food products; study of bioactive components, diets, dietary guides and health interventions)​
  • Dissemination of scientific knowledge to society (scientific dissemination to citizens and development of critical thinking)
