The Research Group “Analysis and Evaluation of Food Safety” (AESA) pursues the general aim of analyzing and evaluating the risks and the application of advanced technologies in the agrifood sector in order to improve food safety and quality. Its activities also include the development of ingredients, foodstuffs, and diets that are either nutritionally balanced or have a healthy functional profile. Its scientifictechnological activity tackles the most currently relevant problems of food safety and nutrition. Its specific goals are subsumed under the area of Agriculture and Veterinary Sciences, focusing on three priority research lines that make up its strategic project: “Safe, nutritional, healthy foods for the 21st century.”
